Chocolate Brownies 

Makes 20 - 25


• 250g unsalted butter
• 100g dark chocolate (70% cocoa solids)
• 100g milk chocolate
• 80g cocoa powder
• 65g plain flour
• 360g caster sugar
• 1tsp baking powder
• 4 eggs


• Preheat your oven to 180C/350F/Gas Mark 4.
• Lightly butter a 25cm/10 inch square cake tin.
• Melt the butter and the chocolate in a glass bowl, suspended over a saucepan of simmering water and stir until smooth.
• Mix the flour, baking powder, sugar and cocoa powder in a separate bowl.
• Tip the melted mixture into this bowl and stir together.
• Beat the eggs and add to the mixture.
• Once well combined, tip the mixture into the prepared tin.
• Cook for 25 minutes and when cool cut into squares.

Raspberry & Rhubarb Crumble


• 500g rhubarb, cut into 2cm pieces
• 125g raspberries
• 8 tbsp caster sugar
• 4 tbsp water
• 1 tsp powdered ginger
• 1 tsp cinnamon
• 110g Demerara sugar
• 180g plain flour
• 110g butter


• Preheat your oven to 180C/350F/Gas Mark 4.
• Place the fruit in an ovenproof dish (4cm deep), sprinkle with water, caster sugar and cinnamon. Roast for ten minutes, once cooked remove and sprinkle over the ginger and mix in well.
• Now for the crumble...Mix the demarara sugar and flour together. Rub the butter into this mixture and then sprinkle over the fruit mixture.
• Bake in the oven for 35-45 minutes until the crumble is crisp and golden-brown.
• Serve with custard or double cream.
• Try this recipe with other berries like strawberries & blackberries.
